Spinach & Artichoke Quesadilla

Spinach & Artichoke quesadilla

I made this for lunch today- it is a great meal to make when you don’t feel like cooking or are short on time. This recipe is SO EASY and great for vegans & non-vegans alike! I made mine vegan by using daiya vegan mozzarella cheese, but you are free to use whatever type of cheese you want!

  • 1/4 TBS oil
  • ounces artichoke hearts drained and chopped
  • 2 handfuls baby spinach leaves
  • 1/2 cup shredded mozzarella cheese (I used vegan)
  • 1 Tortilla (I used a whole wheat carb sense tortilla)

Heat the oil in a large pot over medium-high heat. Add in the artichoke pieces and cook for one minute. Reduce heat to medium, add in the spinach, and cook until wilted, turning often. In a separate pan (or empty the pan you’re using) add the tortilla, spinach/artichoke mix, and cheese. Heat for 1-2 minutes on each side. Cut & enjoy!
