Hello fitfam! I am so happy it’s August (because my birthday is on the 19th) but also because I start back to school soon. I have been enjoying the summer break and have been able to focus on my fitness, but it’s time to go back. I miss learning about nursing!

One major thing happened this summer- my hubby and I went plant based! Today marks week 4 of our plant based diet. It has been an adjustment to say the least, but we are really enjoying this journey. Going full vegan has been a longer process than cutting out meat, but we are getting there. Thank goodness for Pinterest, because they have some of the most amazing vegan recipes that I will be uploading here!

It all started with a visit to a friend in San Diego. She started telling us about her journey to becoming plant based, and to be honest my response was “yeah, I could never do that, I LOVE meat”. But as soon as a we got home, we watched a documentary on Netflix called “What the Health” and let me tell you… The LAST thing that I wanted to eat was any kind of meat. The thought of it made me sick to my stomach. Four days went by without eating meat before I realized, “hey, I might actually be able to do this”, and I haven’t looked back.

{Not to mention, on our way to and from California we passed multiple slaughter houses that made me cry- literally}

My plan for the next few weeks is to upload recipes of all the wonderful vegan meals I have been making to show that it really isn’t as hard as you would think. Mind you, I am no chef- I didn’t start cooking until a couple years ago. All of my recipes will be easy because lets face it, I’m kinda lazy 😉 and not everyone wants to spend hours in the kitchen every night after work. I hope you all enjoy!
